Wales has become a true heavyweight on the global food scene. The 2026 Michelin Guide lists seven restaurants holding stars including the legendary Ynyshir, the only two-star destination in the country.

We’ve picked out the top three "must-visit" spots that every food lover should have on their list. These restaurants don't just serve food, they offer an experience that stays with you long after the final course.

By choosing the train, you can focus on the flavours and the company without worrying about the drive home. It's a positive way to travel that's good for the planet and perfect for a special celebration.

What exactly is a Michelin star?

The Michelin star is the ultimate badge of honour in the culinary world. Anonymous inspectors visit restaurants multiple times to judge them based on five strict criteria: the quality of ingredients, mastery of flavour and technique, the chef’s personality in their cooking, value for money and consistency.

The ratings represent more than just good food:

  • One Michelin star: High-quality cooking
  • Two Michelin stars: Excellent cooking
  • Three Michelin stars: Exceptional cuisine

Our top three Michelin picks

1. Ynyshir, Eglwys Fach

Ynyshir is a world-class destination that has held two Michelin stars since 2022. Chef-owner Gareth Ward has created something completely unique here, part restaurant, part "culinary rave". Set in a matt-black house on the edge of the UNESCO Dyfi Biosphere, the vibe is high-energy with live music and an open kitchen where you can watch the team work with military precision.

What makes it unique?

Gareth Ward’s 30-course tasting menu is a 5-hour journey driven by "fire, fat, and funk". He combines world-class produce, like 300-day-aged Welsh Wagyu beef and Japanese bluefin tuna with bold, globally-inspired flavours. There are no rules, no uniforms, no substitutions. Just a relentless pursuit of the most delicious food possible.

  • Getting there: From Machynlleth station, it’s a quick 10-minute taxi ride to the estate.

2. Gorse, Cardiff

Gorse made waves in 2025 by becoming the first restaurant in Cardiff to receive a Michelin star. Chef-owner Tom Waters brings a wealth of experience from some of the UK’s top kitchens to this intimate neighbourhood in Pontcanna. The restaurant is all about "simplicity done well," with an open kitchen where the chefs personally greet and serve you.

What makes it unique?

The menu is a love letter to the Welsh larder. Tom works closely with local fishermen, farmers and artisans to source ingredients like Gower salt marsh lamb, native seaweed, and fresh seafood. His cooking shows incredible restraint, letting the natural flavours of the produce take centre stage in exquisitely executed dishes.

  • Getting there: An easy walk or local bus ride from Cardiff Central or Cardiff Queen Street stations.

3. Home by James Sommerin, Penarth

Home is a family-run affair in every sense of the word. Chef James Sommerin works alongside his daughters Georgia, Angharad and Elin in the open kitchen, while his wife Louise leads the front-of-house team. The experience begins at the front door, where you ring a bell to be welcomed into a theatrical, dramatically darkened room with cabaret-style tables.

What makes it unique?

The eight-course "surprise" menu changes every five weeks and is built around the very best seasonal Welsh produce. You might find inventive creations like edible pebbles or their famous signature ravioli with an explosive liquid pea centre. It's a warm, personal experience where you truly feel like a guest in the Sommerin family's own dining room.

  • Getting there: The restaurant is in the heart of the seaside town, a five-minute walk from Penarth station.

Michelin dining FAQs

How long does a Michelin tasting menu usually take?

Many Michelin-starred experiences can take four to five hours. It's a whole evening of entertainment, so make sure you give yourself plenty of time.

Do I need to dress up for these restaurants?

It varies. It’s always best to check the restaurant's website for their specific dress code.

What if I have dietary requirements?

Most Michelin restaurants, including Home, can cater for specific dietary needs if you let them know well in advance. However, some venues like Ynyshir have a "no substitutions" policy due to the complex nature of their 30-course menu, so always check before booking.

How early should I book?

We recommend booking at least two to three months ahead for these top spots. For Ynyshir, bookings must be made no later than two months in advance and sell out very quickly.
